Peanut Brittle-Splenda


I make this with Splenda for us older folks.

Serves: 20


  • 1 cup splenda baking
  • 1 cup light corn syrup
  • 1/4 cup butter
  • 1/2 cup water
  • 2 1/2 cups raw peanuts
  • 1 1/2 teaspoons baking soda


Butter a jellyroll pan. Combine Splenda Sugar Blend for baking, corn syrup, butter, and water in a heavy 2 quart saucepan. Cook over medium-high heat until candy thermometer reaches 275F. Add peanuts and continue cooking to 295F. Remove from heat and add soda, stirring until blended. Pour onto prepared pan. Cool and break into bite-size pieces.
